The wine of the professor
The most famous Vino Nobile maker is without any doubt Vittorio Innocenti. In Montefollonico, which is build on a rock, this hospitable and very reputed wine farmer has two wine cellars.
In real life, Vittorio Innocenti was a professor in philosophy. At the end of the seventies, he inherits the wine cellar and farm from his father, and il profesore begins to specialise himself in wine production.
In 1981, he buys a vineyard in the production area of Vino Nobile. He still studies and buys another piece of land in Sambono di Ascianello. In 1985 he produces with success a Vino Nobile, that is highly appreciated by the public and the experts. This is where the success began.
Nowadays, Vittorio Innocenti owns 32 hectare of land in Montepulciano and Montefollonico. He keeps his wine cellars as much as possible in the original state of the thirteenth century. That's how visitors can enjoy the authentic atmosphere.
Vittorio Innocenti sells four kinds of wine: Vino Nobile, Rosso di Montepulciano, Chianti dei Collosenesi and the dessert wine Vin Santo. The wines are kept in barrels of wood of oaks, cherry and hazelnut. In these barrels the wines ripe, depending from the kind, at least two years. The vino rosso only ripens six months.
A good conserved middle-aged alley runs through one of his wine cellars. It leads to a lower situated garden terrace, build on an old city wall. Here, the visitor can taste wine while he enjoys a breath-taking view of the Val di Chiana (Chiana valley).
